The sugar maple,
which is widespread in North America, is used to obtain maple syrup. This is a natural sweetener and, according to legend, was already known to the Iroquois. Those Indians caught the sap of the maple trees and processed it into syrup with the help of cooking stones. The majority of maple syrup is now produced in Québec, Canada. It is very aromatic and tastes especially good with pancakes.
